Peanut Butter Roo Treats

Well, it's official. I've reached crazy-dog-lady status. Roo turned three this week... and I made her peanut butter treats.

Further evidence that I'm a crazy-dog-lady: I actually took the time to search to find a recipe to work from that didn't involve chicken, since Roo has a chicken/poultry allergy, according to the vet.

Yep. Me and my wackadoo dog. Living the flexitarian lifestyle. Boom boom pow.

How can you not love a face like that, though!?

I also realized that Roo turning three means that I've been in graduate school for three years. New meaning to counting life in dog years...  Or does that mean I've been here for 21 years? Mind. Blown.

Happy birthday to the best furry friend a girl/crazy-dog-mom could ask for! Here's to many more years (human or dog!)

Peanut Butter Roo Treats

Adapted from Shared Sugar

1/2 cup peanut butter
1/4 cup honey
1 tablespoon olive oil
1 cup warm water
1 cup rolled oats
2 cups whole wheat flour
1/4 cup cornmeal

Preheat oven to 350F degrees.

In a medium bowl, whisk together peanut butter, honey, oil and water. In another bowl, combine dry ingredients; fold dry ingredients into wet ingredients until well combined.

Turn dough out onto a floured surface, roll to 1/2" thickness, and cut out into cookies using a cookie cutter of your choice. Reroll scraps and continue to cut out treats until all dough is used. Put cookies on a parchment lined baking sheet and bake for 15 minutes.Transfer to a cooling rack; once cooled, store in an airtight container for up to a week.

Makes approx. 36 dog treats.
