Winter Veggie Spring Rolls

Every Thursday, I have a lovely bunch of friends who come over and watch Big Bang Theory (and Grey's Anatomy, but we pretend like we're talking through it). Usually there's food involved (isn't there always?)

This week, I decided to keep it simple and light. Veggie and tofu spring rolls.

Sliced red onion, lightly sauteed and cooled green beans, carrots, and tofu quick-fried in stir-fry sauce.

Wrap it up in a rice paper wrapper (great how-to can be found on Iowa Girl Eats), slice it, and serve with soy sauce, a nice red wine, and a great group of friends.
